Ingredients
- 2 cups / 180 g rolled oats
- ½ cup mixed nuts, roughly chopped
- 2 tbsp butter or coconut oil
- 3 tbsp maple syrup
- big pinch salt
- 1 tsp cinnamon
- 2 cups / 500 g plain yogurt
- fruit: berries, sliced banana, or roasted stone fruit
Method
- Melt butter and syrup in a wide pan. Add oats, nuts, salt and cinnamon.
- Toast on medium, stirring often, 6–8 minutes until golden and smelling like a bakery.
- Cool completely on the tray — it crisps as it cools.
- Layer yogurt, fruit, granola. Jar it for mornings you leave early.
