  1. Soak the sliced onion in cold water for 5 minutes — it takes the aggression out.
  2. Whisk the oil, lemon juice, zest, salt and pepper in the bottom of a big bowl.
  3. Fold in the beans, then the tuna in big flakes — do not mash it into paste. Add celery, drained onion and parsley.
  4. Chili flakes if you like. It improves after ten minutes of sitting.
