Method

  1. Soften the leek and carrots in the oil, 5 minutes, without browning.
  2. Add the garlic for one minute, then the stock. Bring to a simmer.
  3. Add the orzo; cook 8–9 minutes until just tender.
  4. Drop in the shrimp for the last 2–3 minutes — they are done the moment they turn pink and curl.
  5. Off the heat: lemon juice, zest and the dill. Season well.
Worth knowing. The orzo keeps drinking the broth overnight — add a splash of water when reheating, and expect softer shrimp on day two.
