Method

  1. Fry the chickpeas in 2 tbsp oil over high heat, mostly undisturbed, 8–10 minutes until crackly. Salt and dust with paprika off the heat.
  2. Chop and combine the salad; whisk the remaining oil with lemon, oregano, salt and pepper.
  3. Dress the salad, top with feta and the hot chickpeas.
Worth knowing. Chickpeas must be genuinely dry before frying — roll them in a tea towel.
