  1. Brown the beef hard in the oil — leave it untouched 2 minutes before breaking it up. It should catch real colour.
  2. Add onion, carrots and celery; soften 5 minutes.
  3. Stir in garlic, paprika, thyme and tomato paste for one minute.
  4. Add tomatoes and stock. Simmer 15 minutes, then add the zucchini for 5 more.
  5. Finish with the vinegar; taste and season properly — tomato broths take more salt than expected.
