  1. Fry the curry paste in the oil for one minute until it smells serious.
  2. Add the chicken and stir to coat, 2–3 minutes.
  3. Pour in the coconut milk and fish sauce; simmer gently 12–15 minutes until the chicken is cooked through.
  4. Peppers and green beans in for the last 5 minutes — they should keep some bite.
  5. Meanwhile, cook the cauliflower rice in a second hot, dry-ish pan with a pinch of salt, 4–5 minutes.
  6. Off the heat, squeeze in the lime and scatter the herbs over the curry.
