Ingredients
- 6 lamb loin chops (about 1.5 lb / 700 g total)
- 1 lb / 450 g carrots, halved lengthways
- 4 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- big bunch mint and parsley, finely chopped
- juice of ½ lemon
- 1 clove garlic, grated
- salt and black pepper
Method
- Heat the oven to 425°F / 220°C. Toss the carrots with 2 tbsp oil, half the cumin and salt; roast 25 minutes until browned and bendy.
- Meanwhile stir the chopped herbs with the lemon juice, garlic, 1 tbsp oil and a pinch of salt — a rough, spoonable sauce.
- Rub the chops with the last of the oil, the remaining spices, salt and pepper.
- Sear in a screaming-hot pan, 3–4 minutes a side for pink. Rest five minutes.
- Plate the carrots, chops on top, herb sauce over everything.
Worth knowing. The herb sauce keeps three days and is just as good on chicken or roasted squash.
