Method

  1. Blitz the walnuts and almonds in a food processor to coarse crumbs.
  2. Add the dates, cocoa, chia and salt; run until the mixture clumps and holds when pinched. Add water a teaspoon at a time if it stays sandy.
  3. Roll into walnut-sized balls; roll half of them in coconut if you like the contrast.
  4. Firm up in the fridge 20 minutes if you can wait that long.
